Lotus Seeds (मखाना (Makhana))
Lotus Seeds, or Makhana, are one of my favorite traditional snacks. They are harvested from the seeds of lotus flowers and then popped like corn to create these light, crunchy white puffs. In my home, they are a staple during fasting days, but I love them anytime as a healthy alternative to processed chips. They have a very neutral, slightly nutty taste that acts like a sponge for spices. I usually roast them in a little ghee with black salt and pepper for a simple, satisfying crunch. They are also wonderful in rich desserts like kheer, where they soften up and soak in the creamy milk. They feel very pure and grounded, a gift from our water bodies that brings a sense of comfort to the plate.
