Bhatte Ki Sabzi is a unique and rustic preparation from Rajasthan where roasted maize kernels (Bhatta) are cooked in a spicy yogurt-based gravy. In the villages, we often roast the corn over a wood fire before removing the kernels, which gives the dish a magnifique smoky character. The gravy is traditional Rajasthani—tangy from the yogurt and rich with dry spices like coriander and red chili. It is a hearty, seasonal meal that is usually prepared when fresh corn is in abundance during the monsoon. I love eating this with hot, thick bajra rotis and a side of raw onions.
