Chakhao Kheer is a royal and visually stunning dessert from Manipur, made using the indigenous black glutinous rice. This rice is famous for its deep purple color and a magnificent nutty aroma that fills the entire house while it's cooking. Unlike regular rice kheer, Chakhao Kheer has a slightly chewy texture and a very rich, complex sweetness. We usually prepare this during festivals, weddings, or to welcome special guests as it is a symbol of prestige and hospitality. The vibrant purple hue of the milk against the dark grains makes it look like a piece of edible art. It’s best served chilled or at room temperature, allowing the flavors to settle.

Tips & Secrets
- Soaking is the most important step; black rice is much tougher than white rice and needs time to soften.
- Always cook the kheer on a low flame; high heat can cause the milk to burn before the rice is fully cooked.
- The color of the kheer deepens as it sits, so don't worry if it looks light lavender initially.
