Kodo Bhat is a simple and wholesome steamed dish made from Kodo millet, an ancient grain that has been a part of Indian tribal diets for centuries. It is an incredible gluten-free alternative to regular rice and is loved for its earthy aroma and slightly nutty texture. We usually cook it just like rice, ensuring the grains are separate and fluffy. It is very light on the stomach and keeps you full for a longer time due to its high fiber content. In the villages of Central India, it is often served with a simple vegetable jhol or a side of curd. I find it very satisfying to eat a meal that connects us back to our traditional farming roots.
