Bhatt Ka Jaula is a soul-warming black bean rice porridge from the high hills of Uttarakhand. It is a very simple meal made by slow-cooking local black soybeans (Bhatt) with rice and a simple tempering of jumbo (dried mountain herb). This dish is usually made on rainy days when you want something that is both nutritious and incredibly comforting. The beans give the rice a deep, dark color and a rich, nutty flavor that is quite unique to the region. It is best eaten hot with a dollop of fresh ghee and a side of spicy pahadi chutney.
