Bhutte Ka Salan

Bhutte Ka Salan is a Hyderabadi-style corn curry that uses the rich and nutty 'Salan' base usually associated with green chilies (Mirchi Ka Salan). In this version, we use sweet corn or tender baby corn, which provides a lovely sweetness against the backdrop of toasted peanuts, sesame seeds, and tamarind. It is a royal dish, packed with layers of flavors—creamy, nutty, tangy, and spicy. It is a magnifique accompaniment to Hyderabadi Biryani or plain steamed rice. Making the salan base is an art, where the roasting of seeds is the most crucial part to get that authentic aroma.

Tips & Secrets
- Always roast the seeds on a very low flame; if they burn, the gravy will taste bitter.
- Using fresh tamarind pulp instead of store-bought paste gives a brighter tang to the salan.
- You can add a few slit green chilies at the end for that extra Hyderabadi punch.
