Elephant Foot Yam, popularly known as Jimikand or Suran, is a massive tuber that truly lives up to its name. It has a rough, bark-like skin and a very firm, pale orange flesh. In my kitchen, this is often considered a 'meat alternative' for vegetarians because of its dense, satisfying texture. I especially love making a spicy 'Suran Fry' or a rich curry during the Diwali season, which is a traditional custom in many homes.
