Singju is a vibrant, fiery, and incredibly healthy vegetable salad from Manipur. It’s one of the most beloved street foods in the state, made with a magnificent mix of finely shredded seasonal vegetables and a special spicy dressing. We use indigenous ingredients like cabbage, lotus stem, and various local herbs, tossed with a roasted pea and chili powder mix. The taste is an explosion of flavors—crunchy, pungent, and very spicy. In Manipur, every home has its own secret version of Singju, but it always remains a symbol of freshness and vitality. It is traditionally eaten as a midday snack or as a side to a simple meal. It’s a very honest and high-quality representation of the clean eating habits of Northeast India.

2 cups Cabbage, finely shredded
1/2 cup Lotus stem (Thambou), thinly sliced
1/2 cup Roasted Pea powder (or Besan)

  • Tossing the salad with your hands is traditional and helps in better flavor distribution than using a spoon.
