Ivy Gourd (कुंदरू / टेंडली (Kundru))

Ivy Gourd, known as Kundru or Tendli, is a small, bright green vegetable that looks like a miniature cucumber. In my kitchen, this is a savior for quick weeknight meals. It has a lovely crunch that holds up well even after cooking. I personally love it when it's sliced thin and sautéed with just a bit of turmeric and cumin until the edges get slightly charred. It has a very mild, slightly tangy taste that everyone in the family enjoys. It is one of those humble vegetables that doesn't demand much attention but always delivers a satisfying, home-cooked feel to the plate.
