Apple Gourd (टिंडा (Tinda))

Apple Gourd, or 'Tinda' as most of us know it, is a small, round green vegetable that is a staple in North Indian homes during the summer. It gets its name because its shape and size are quite similar to an apple. I know many people have a love-hate relationship with Tinda, but I find that when it's stuffed with spicy masalas, it is absolutely delicious. It has a mild, watery taste that perfectly balances bold Indian spices. My grandmother used to make the best 'Bharwan Tinda'—slow-cooked until the gourd was soft and full of spice. It is a very light and cooling vegetable that reminds me of quiet summer afternoons. It is an honest, everyday ingredient that brings comfort to the plate.

Cooking Tips
